3. Sweet Potato Fries
What you need:
3 large unpeeled sweet potatoes
Tbsp melted coconut oil
Tbsp honey
Salt
½ tsp ground cinnamon
¼ tsp paprika
To make:
Preheat the oven to 400 degrees. Line a rimmed baking sheet with aluminum foil or parchment paper. Set aside. Cut ends off of the potatoes, slice in half lengthwise, and then cut into quarter-inch batons. Try to create even pieces. Place in a mixing bowl and add in the coconut oil, honey, salt, cinnamon, and paprika. Toss to coat. Spread potatoes into a single layer over the baking sheet. Bake for 30 to 40 minutes or until browned. Turn every 15 minutes to bake evenly. The baking time for these fries will vary based on the thickness of the potatoes. If desired you can add some extra honey to the top of the fries when they are done baking.
