1. Allergen Free Cookies
Ingredients
- ½ cup of sunflower seed butter
- ½ cup of coconut palm sugar
- 3 tbsp of oat flour
- 3 tbsp of vegan chocolate chips
- 2 tbsp of unsweetened applesauce
- A tsp of vanilla extract
- ¾ tsp of baking powder
- ⅛ tsp of sea salt
- Optional: ¼ tsp xanthan gum (will make cookies crumble less)
To make:
First, preheat your oven to 350 degrees F. In a bowl, mix the flour, sugar, xanthan gum, salt, and baking powder together. In a different bowl add the applesauce, vanilla, and sunflower seed butter. Add the dry ingredient mix into the wet ingredients and mix until combined. Stir in the chocolate chips. Scoop 2 tbsp of the batter at a time and place on a cookie sheet. Press down to flatten the cookies. Bake for about eight to ten minutes or until the cookies are crispy around the edges. Let cool on pan for a couple of minutes and then transfer cookies to a cooling rack.
