2. Salted Oatmeal Cookies
What you need:
- 1 cup of rolled oats
- 1 cup of coconut sugar
- ½ cup of coconut flour
- ½ cup of gluten-free flour
- 3 Tbsp. of mini chocolate chips
- 1 tbsp of chia seeds
- ½ tsp each of cinnamon, baking soda, and pink salt
- A mashed banana
- ⅓ cup of melted coconut oil
- 4 tbsp of non-dairy milk
- 3 tbsp of water
- A tsp of apple cider vinegar
To make:
Preheat the oven to 350 degrees Fahrenheit. Prepare a baking sheet with parchment paper. In a bowl mix the chia seeds with the water and set aside. In another bowl mix together the coconut oil, banana, apple cider vinegar, and milk. In another bowl mix together the coconut sugar, oats, flours, baking soda, salt, and cinnamon. Mix until combined. Add in the banana mixture and the chia mixture. Measure out one inch balls of dough onto the prepared baking sheet. Press down on the dough balls to flatten. Bake in the preheated oven for about 15 to 18 minutes, or until golden brown.
