2. Chicken taco stuffed peppers
This chicken recipe is super healthy and loaded with flavors, as well as tons of vital nutrients. For the ingredients, you will need cored and halved large bell peppers, chopped skinless rotisserie chicken, diced red onion, canned low sodium black beans, enchilada sauce, canned green chiles, crushed tortilla chips, shredded Mexican cheese, Greek yogurt, cilantro, and jalapenos. Place the chicken in a bowl and shred it as best as you can. Add in red onions, canned black beans, green chiles, and red enchilada sauce. Stir everything together until well mixed.
