2. Vegetable Soup
Vegetable soup can come in a whole host of different forms. The idea is simple: that you take a whole bunch of vegetables and then add them together in order to make something incredibly nutritious and wholesome.
In the case of vegetable soup, you’re going to be adding vegetables that will lend themselves well to a more watery base. In other words, that will often mean avoiding the likes of broccoli which can become a bit too soft.
Instead, great candidates include carrots, peas, potatoes, leeks, parsnips, pepper, and other ‘garden’ vegetables. Add cream if you want to thicken, or keep it nice and healthy and let your stock do the talking.
