1. Roasted Salmon with a Kale and Quinoa Salad
What you need:
6 ounce wild salmon fillet
Tsp olive oil
½ cups thinly sliced kale
½ cup of cooked quinoa
Tbsp citrus dressing
5 seedless grapes halved
Preheat the oven to 425 degrees. Place the salmon on a baking sheet that is lined with foil and sprayed with cooking spray. Rub oil over the fillet and then sprinkle with salt and pepper. Bake the fish at 425 degrees for ten minutes or until the fish flakes easily with a fork. While the fish is cooking combine the kale, quinoa, citrus dressing, and grapes in a bowl. Stir to combine.
Let stand for five minutes and then top with the salmon. This recipe can easily be doubled or even tripled depending on how many people that you are serving, just use more fish fillets and line the baking dish with them. The cooking time will remain the same no matter how many fillets that you serve.
