3. Pulled Pork Burritos
When most people think of burritos, they imagine a ground beef. We like to get inventive with our recipes and put together this idea for pulled pork burritos. Your family will love them!
INGREDIENTS
3-lbs. Pork shoulder roast.
1-can diced tomatoes with green chilies.
¼-cup chili powder.
3-tablespoons minced garlic.
2-tablespoons lime juice.
2-tablespoons raw honey
1-tablespoon chopped jalapeno pepper.
1-teaspoon kosher salt.
10-flour tortillas – warmed.
Sliced avocado, sour cream and minced fresh cilantro for serving.
METHOD
Cut the pork roast in half and place in a slow cooker. Combine the chili powder, tomatoes, lime juice, garlic, jalapeno, salt, and honey in a food processor – pulse to combine. Pour the mixture from the food processor over the pork and add cover the pot. Slow-cook for 8 to 10-hours until the meat is tender.
Remove the roast and let it rest for 10-minutes to remove any excess moisture. Shred the roast with two forks, and return it to the slow cooker. Once heated through, spoon a ½-cup of the pork onto a tortilla. Top with sour cream, avocado, and sprinkle with cilantro.
