1. Seared NY Strip with Blue Cheese Sauce

A New York strip is possibly the tastiest cut of beef you can buy. Visit your butcher and ask him to cut you a 1-1/2-inch thick steak right off of the bone. The best part about a NY strip is the fact that it’s so easy to cook, the meat heats up fast, and it’s ready in no time flat. Our recipe enhances the flavor of the steak with a blue cheese sauce that’s an incredible addition to the steak.

INGREDIENTS

1-1/2-inch thick, 1lb. NY strip, (we don’t like going thinner than this, or thicker than 2-inches.)
1-tablespoon coconut oil.
2-tablespoons grass-fed butter.
2-sprigs rosemary.
2-cloves minced garlic.
Crushed Himalayan pink salt and cracked black pepper to taste.

INGREDIENTS – Blue Cheese Cream Sauce

2- tablespoons chopped parsley.
½-cup blue cheese, crumbled.
1-cup heavy cream.

METHOD

Pat the steak dry with paper towels and season with salt and pepper. Place a skillet over high heat until red hot. Add the coconut oil to the pan and let it melt. Place the steak in the pan and sear for 30-seconds on each side.

Add the rosemary and butter to the pan. Cook further for 2 to 3-minutes on each side after searing, basting with the butter.

While the steak rests, add the cream to a saucepan over medium heat. Add the blue cheese and stir until it melts. Remove from the heat and smother the steak.
