2. Braised Red Cabbage
What you need:
4 oz of bacon cut into half inch pieces
An onion, thinly sliced
A head of red cabbage, cored, halved and then cut into half inch thick slices
½ cup of cider vinegar
½ cup of dry red wine
¾ cup of water
2 tbsp of brown sugar
Salt and pepper to taste
An apple, cut into half inch pieces
To make:
Cook the bacon in a large pot, stirring occasionally until the bacon is crisp. Add in the onion and cook until translucent. Add in the cabbage, wine, vinegar, sugar, water, and salt. Stir to combine. Reduce heat to medium low and cook for about thirty minutes. Add the apple into the cabbage and cook covered until the apples and cabbage are tender, about 25 minutes. Season with pepper. Serve as a warm side dish for any meal.
