2. Greek Chicken with Rice Pilaf
This quick and easy chicken with rice pilaf is a tasty dish that you can prepare for any weeknight meal.
What you need:
For the marinade:
4 boneless chicken breasts, about six ounces each
3 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp garlic
Salt and pepper
Pinch of red pepper flakes
4 tsp oregano
For the Rice Pilaf:
1 and ¼ cup long-grain minute rice
2 and a half cups chicken broth
2 tbsp of lemon juice
Mix together all of the ingredients for the marinade except for the olive oil in a plastic bag. Mix well and then add the chicken. Let marinate for 15 minutes or so. In the meantime, make the rice. Bring the lemon juice, butter, and chicken broth to a boil. Add in the rice and cook according to the package directions. While the rice is cooking, heat up the olive oil in a pan. Add in the chicken and cook until no longer pink. Serve with the rice.
