2. Chicken and Chorizo Tray Bake
This is another hearty meal full of veg that is actually surprisingly easy to make. To create it, you’re essentially just going to be chopping up lots of veg small, arranging it on a tray, and covering it in oil.
That veg should include small potato wedges (with the skins on), pieces of carrot, parsnip, and a liberal amount of red onion (to taste).
For the chicken, you should use 1-2 chicken breasts per person. What makes this a chicken and chorizo tray bake, of course, is the chorizo. Cut this into small slices and then add to the tray.
Cover everything in some olive oil, then bake in the oven for about 40 minutes on 200C or 180C (Fan).
