3. Mexican Chicken
Mexican chicken is not a traditional Mexican recipe, but rather just a tasty chicken recipe that is heavily inspired by Mexican flavors.
To make this one, you’re going to get some diced chicken breast off the bone and an egg. Add the egg to a small bowl or plate, and next to it, do the same thing with some golden bread crumbs.
Now take each piece of chicken and roll it in the egg, before rolling it into the bread crumbs. Add each to a tray and then squeeze some lemon juice over them both.
Finally, place the whole thing in the oven on 180-200C for about 40 minutes.
While that cooks, you’re going to make a fruit chutney. To make this, you will take red onion, a red bell pepper, some diced apple, and some raisins. Fry this combination on the hob in some oil and a little water, and then add either some mango chutney or some honey, along with a little chili powder to taste.
