1. Picada
This is a Spanish tradition that is celebrated in many Hispanic countries, and for good reason! Essentially, picada is a glorified appetizer, and there are virtually infinite variations to it. Large picadas actually take the place of main courses, so you can make your whole dinner about one of them. Traditional, picadas are served in special wooden boards, that are large and with many holes or concavities where you put different ingredients, but you can use small bowls and plates.
Picadas are a series of ingredients cut in pieces of about a square inch, that you pick with small forks or sticks an put on top of crackers and slices of bread. The traditional ingredients of a picada are a variety of sliced cheese and cold meat such as ham and sausage, pickles, green and black olives, and slices of leberwurst or German sausage, and a classic is a mix of mayonnaise and tuna.
