
Quiche is often thought of as being a breakfast dish. However, it is also great as a high protein lunch or dinner and can even be eaten as a midday snack. Quiche is simply a milk and egg custard that is filled with all sorts of extras such as ham, bacon, veggies, cheeses, and greens.

1. Zucchini and Corn Quiche
What you need:
2 tbsp of butter
2 zucchini, sliced thinly
¼ of a cup of diced onion
Tbsp of chopped oregano
1 Tbsp fresh thyme, chopped
Salt and pepper to taste
1 and a half cups of corn kernels
6 large eggs
¼ of a cup of heavy cream
¼ of a cup of ricotta
A cup of swiss cheese, grated
Optional garnish: parsley
To make:
Preheat oven to 375 degrees. Melt butter in a skillet over medium-high heat. Add in the onion and zucchini. Cook for around five minutes and then add in the corn. Cook for five more minutes and then stir in the thyme, oregano, salt, and pepper. Remove from the heat.
In a bowl, whisk together the heavy cream, eggs, and ricotta cheese. Add in the swiss. Reserve 2 tbsp for the topping. Fold the cheese into the veggie mixture. Spray a pie pan with cooking spray and then pour the egg mixture into the pan. Sprinkle with remaining swiss. Cover with foil and bake for 15 minutes. Remove the foil and bake an additional fifteen minutes or until the quiche is cooked through.
