2. Chocolate Gingerbread Men
If you’re a fan of gingerbread men, then you’re going to love this recipe for a chocolate version of this favorite cookie.
INGREDIENTS
3-1/3-cup all-purpose flour.
1-large free-range egg, room temperature.
12-tablespoons grass-fed butter, at room temperature.
2-oz. Dark chocolate chips.
½-cup unsweetened cocoa powder.
¾-cup brown sugar.
1-tablespoon ground ginger.
¾-teaspoon ground cloves.
1-tablespoon cinnamon.
¾-teaspoon baking soda.
1-teaspoon orange zest.
¾-cup molasses.
½-teaspoon Himalayan pink salt.
METHOD
Take a medium mixing bowl and add the cocoa powder, flour, baking soda, brown sugar, ginger, cinnamon, cloves, salt, and zest – mix until combined. Add the chocolate chips and keep stirring.
In a separate bowl, whisk together the molasses and the egg. Gradually add the molasses mixture to the dry ingredients and mix until a soft dough begins to form. Remove the cookie dough, place on a floured surface and roll into plastic wrap, store in the fridge for 2-hours.
Remove the dough from the fridge and roll it out with a rolling pin till its half an inch thick. Use a gingerbread man cookie cutter to cut out the cookies.
Preheat the oven to 350F. Line a baking tray with parchment paper and add the gingerbread men. Bake for 10-minutes until firm. Remove from the oven and cool. Pack in air-tight containers and store in the fridge for up to 3-days.
