6. Bacon and Brussels Sprouts with Orange
We love brussels sprouts. These tiny crucifers are another acquired taste that will grow on you –especially when wrapped in bacon.
INGREDIENTS
1-½-pounds brussels sprouts, trimmed and halved.
4-strips honey-roasted back bacon, cut into ¼-inch slices.
2-navel oranges – cut into rounds.
1/3-cup extra-virgin olive oil.
½-teaspoon kosher salt.
METHOD
Preheat the oven to 425F. Take a rimmed baking tray and brush it with oil. Add the oranges in a single layer, season with salt and drizzle with olive oil. Cut the Brussels in half and toss in a bowl with kosher salt and olive oil until coated. Place the Brussels face down on top of the oranges. Send the tray to the oven and roast for 15-minutes.
Pull the tray from the oven and sprinkle the bacon bits on top of the oranges. Return the tray to the oven and roast for another 10-minutes until the bacon turns crispy, and the oranges caramelize.
