3. Slow-Cooked Chicken and Bacon Orzo Soup
The perfect soup for an afternoon snack that gets you through until dinner. The addition of orzo in this dish gives you the carbs you need to avoid an afternoon blood-sugar crash.
INGREDIENTS
1-cup Orzo pasta.
½-lb. Skinless, deboned chicken breast.
6-cups chicken stock.
5-slices fried bacon, diced.
2-tablespoons grass-fed butter.
1-onion, chopped.
2-cloves minced garlic.
½-cup celery, chopped.
½-cup carrots, chopped.
Chopped parsley.
Cracked black pepper and crushed Himalayan pink salt to taste.
METHOD
Take a large crockpot and add 2-tablespoons of butter. Add the carrots, celery, onions, and garlic, sautéing till golden brown. Add a pinch of salt and stir the vegetables until they caramelize. Add the chicken and cover with the stock. Bring the soup to the boil and then reduce the heat to simmer for 20-minutes until the chicken cooks. Remove the chicken from the soup and shred before adding it back to the pot.
Bring the broth back to the boiling point and add the orzo. Reduce the heat again and let it simmer for 10-minutes until the pasta is tender. Pour the soup into a bowl and garnish with diced bacon and fresh parsley.
