3. Chicken enchilada soup
Inspired by Mexican cuisine, this soup is both bursting with flavor and belly filling. Ingredients include shredded chicken, canned black beans, minced garlic, canned tomatoes, diced white onion, chicken stock, flour, olive oil, ground cumin, shredded sharp cheddar cheese, canned enchilada sauce, and salt. To make the soup, start by heating the oil in a large pot on medium high heat. Add in the onion and garlic.
Saute until the onion is translucent. Whisk in the flour and cook for about a minute. Pour in chicken stock and stir until thoroughly combined and smooth. Pour in more chicken stock and quickly stir to combine. Place chicken, black beans, tomatoes, enchilada sauce, and cumin in the pot and mix until everything is combined. Lower heat and let simmer and stir so that it doesn’t stick to the bottom of the pan. Season with salt and cheddar cheese.
