If you’re not feeling the cake mix cookies (what is wrong with you?) then you can always use this recipe for another delicious cookie mix. This time the key ingredients will be the coconut flour, but also almond butter, almond milk, and for added health benefits – protein powder.
Almond is a great milk substitute and the butter is full of healthy fats, fiber, and protein. And while you might want to avoid protein powder, it can actually be a tasty and effective way to fortify your bakes and make them healthier. Protein powder can be made in a number of different ways. Whey protein is made from milk extract and so isn’t safe for vegans, but you can use protein powder made from egg or even soy if you prefer.
For flavoring, you can add some vanilla extract, chocolate chips, and coconut sugar. A little baking soda will help with the rise, and you should also add one large egg to bind everything together.
