2. Ambrosia Salad
Let’s get creative with this recipe for ambrosia fruit salad. Sour cream and marshmallows in a fruit salad – Doesn’t that sound terrific? This dessert-style recipe is juicy and full of vitamins, it’s perfect for dessert after a dinner party, or it makes an excellent afternoon snack.
INGREDIENTS
1-cup chopped pineapple.
1-can mandarins, drained
½-cup sour cream.
1-½-cup Cool Whip.
3-cups mini marshmallows.
1-cup shredded coconut.
¾-cup maraschino cherries – drained and halved.
¾-cup toasted pecans – roughly chopped.
METHOD
Take a medium mixing bowl and fold together the cool whip and sour cream – whisk until well-combined and fluffy. If you can’t find a cool whip, then half a cup of whipping cream will suffice. Add the pineapple, orange, coconut, and cherries with the marshmallows and pecans. Cover the bowl and refrigerate for 2-hours to set up.
Serve for breakfast the following morning, or pack into a Tupperware for a healthy lunch at the office.
