3. Strawberry Bruschetta
What you need:
A French baguette, sliced on the diagonal about one-half-inch thick
A cup of diced strawberries
1 tbsp granulated sugar
4 oz goat cheese, at room temp
Tbsp olive oil
2 tsp balsamic vinegar
¼ cup of fresh basil leaves
pepper
How to make:
Place the strawberries into a bowl and top with sugar. Cover and refrigerate for around two or three hours or until the strawberries are softened slightly. Take the goat cheese and spread it evenly over the bread slices. Add the strawberries to the top.
Drizzle the balsamic vinegar and the olive oil over the top of the strawberries. Top each slice of the bread with some basil. Season it with pepper to taste. This can be served as a sweet appetizer or it can also be served as a dessert to be served after a meal. It is so tasty that it can even be eaten as a snack at any time.
