1. Mexican Spare Ribs with Vegetable
What you need:
½ pound tomatoes
5 poblano chilies
2 cloves of garlic
1 yellow onion
Salt and pepper
1 ½ pound pork spare ribs
2 tbsp lard
1 ½ pound zucchini, sliced
2 tablespoons of lard
4 cups of beef stock
16-ounce bag frozen corn, thawed
½ pound firm Mexican cheese
To make:
Heat oven to broil. Put the poblano peppers on a baking sheet and broil, turning as needed, about 15 minutes or until charred. Let cool and then trim and remove the seeds and slice thinly. In a pan, cover the garlic, tomatoes and onion with water and bring it to a boil. Reduce the heat to a simmer and cook until the tomatoes soften. Drain the liquid and place the rest in a blender and puree.
Heat the lard in a saucepan over medium-high heat. Season the ribs with some salt and pepper and then cook until browned. Move the ribs to a plate. Add the zucchini, corn, and tomato puree and cook until most of the liquid evaporates. Add the beef stock and the ribs and cook until the sauce thickens and the ribs become tender about 90 minutes. Serve hot.
