INGREDIENTS – For the Chicken.
4-spring chickens – spatchcocked
6-tablespoons extra virgin olive oil.
4-cloves garlic, crushed.
Juice of 1 lemon
1-teaspoon thyme.
INGREDIENTS – For the hummus.
6-oz. Cooked chickpeas.
24-oz. Butternut or pumpkin squash.
2-cloves garlic, sliced.
2-½-tablespoons tahini.
2-tablespoon extra olive oil.
Juice of 1 lemon
METHOD
In a small bowl, combine the thyme sesame seeds for the marinade Place the chicken in a baking dish and cover in the marinade, leave overnight.
Preheat the oven to 375F. Place pumpkin chunks into the roasting tin, drizzle with oil – roast for 25-minutes until fork tender. Add the rest of the hummus ingredients to the food processor along with the pumpkin and puree.
Remove the chicken from the fridge 1-hour before cooking. Prep the grill to medium heat, add the chicken and sear on each side for 1-minute. Cook the chicken for a further 25-minutes. Remove from the grill and serve with the hummus and fresh bread, lemon wedges on the side.
