2. Kielbasa Potato Slaw
What you need:
1 and ½ tsp cornstarch
¼ cup cider vinegar
Tbsp honey
Tsp Dijon mustard
Salt and pepper to taste
Tbsp canola oil
1 package kielbasa, cut into quarter-inch slices
2 medium red potatoes cut into half-inch pieces
½ cup sweet onion, sliced
½ cup sweet red pepper, chopped
4 strips of bacon, cooked and crumbled
½ cup water
Tsp beef bouillon granules
14 ounce coleslaw mix
To make:
In a small bowl, whisk together the first six ingredients. Mix until smooth. In a skillet, heat the oil over medium-high heat. Add in the potatoes, kielbasa, peppers, onion, and bacon. Cook for three to five minutes or until the sausage is browned. Add the water and the bouillon. Bring to a boil and then reduce heat. Cover and simmer for six to eight minutes or until the potatoes are close to tender. Add in the coleslaw and cook for four to six more minutes or until everything is tender. Add in the cornstarch mixture, cook until sauce is thickened.
