1. Crockpot Chicken-Tortilla Soup
This Mexican-inspired meal is a firm favorite in any household. Perfect for sharing during the Superbowl. Invite your friends round for a dinner party and serve them this delicious recipe.
INGREDIENTS
1-¼-lbs. Skinless chicken thighs.
2-squash – diced.
2-cups chicken stock
1-onion – chopped.
½-red bell pepper – chopped.
3-oz. Green beans – halved.
1-can diced tomatoes.
1-can tomato sauce.
1-clove minced garlic.
1-can green chili – chopped.
1-teaspoon dry oregano.
1-teaspoon chili powder.
¾-teaspoon ground cumin.
1-tablespoon lime juice.
2-tablespoons chopped cilantro – plus more for serving.
Sour cream, sliced jalapeños, and tortilla chips – for serving.
METHOD
Take a crockpot and add the chicken, bell pepper, onion, diced tomatoes, garlic, broth, chilies, and chili powder, along with the tomato sauce, cumin, and oregano – season with salt and pepper to taste.
Cover with a lid and cook on low heat for 8-hours. Add the beans and the squash and cook covered for 30-minutes. Remove the chicken and strip from the bones – discard the bones. Return the chicken to the crockpot and stir in the cilantro with the lime juice.
Garnish with jalapeños, cilantro, and sour cream, serve with tortilla chips alongside.
