As the winter season draws near, it’s time to pull out the crockpot for some cold weather nutrition that tastes terrific. The best part about cooking with a crockpot is that you can use it to prepare some many different dishes – from Mediterranean cuisine to mouthwatering Mexican meals.

With the pace of our modern lifestyle, we all crave the convenience of food that’s easy to prepare. If you find you don’t have much time to cook in the week, a crockpot will suit your lifestyle. Most recipes are easy to make and ready in less than an hour from scratch.

1. Crockpot Chicken-Tortilla Soup

This Mexican-inspired meal is a firm favorite in any household. Perfect for sharing during the Superbowl. Invite your friends round for a dinner party and serve them this delicious recipe.

INGREDIENTS

1-¼-lbs. Skinless chicken thighs.
2-squash – diced.
2-cups chicken stock
1-onion – chopped.
½-red bell pepper – chopped.
3-oz. Green beans – halved.
1-can diced tomatoes.
1-can tomato sauce.
1-clove minced garlic.
1-can green chili – chopped.
1-teaspoon dry oregano.
1-teaspoon chili powder.
¾-teaspoon ground cumin.
1-tablespoon lime juice.
2-tablespoons chopped cilantro – plus more for serving.
Sour cream, sliced jalapeños, and tortilla chips – for serving.

METHOD

Take a crockpot and add the chicken, bell pepper, onion, diced tomatoes, garlic, broth, chilies, and chili powder, along with the tomato sauce, cumin, and oregano – season with salt and pepper to taste.

Cover with a lid and cook on low heat for 8-hours. Add the beans and the squash and cook covered for 30-minutes. Remove the chicken and strip from the bones – discard the bones. Return the chicken to the crockpot and stir in the cilantro with the lime juice.

Garnish with jalapeños, cilantro, and sour cream, serve with tortilla chips alongside.
