2. Crockpot Mediterranean Chicken
Fresh vegetables blended in the crockpot with chicken and cooked to perfection for an out-of-this-world Mediterranean flavor experience.
4-skinless chicken breasts.
1-cup julienned roasted red peppers.
1-tablespoon minced garlic.
1-cup Kalamata olives.
1-onion – chopped.
3-teaspoons Italian seasoning.
2-tablespoon lemon juice.
Crushed Himalayan pink salt and cracked black pepper to taste.
Basil leaves for garnish.
Season the chicken with salt and pepper and cook in a skillet over medium-high heat for 2-minutes on each side until they begin to brown. Transfer to the crockpot and add the onions, red peppers, olives, and capers – stir to combine.
In a medium mixing bowl, add the Italian seasoning with the garlic, lemon juice – whisk to combine and pour over the chicken in the pot. Cover the crockpot and cook on high heat for 2-hours. Garnish with oregano and thyme before serving.
