3. Crockpot Orange Chicken
No breading or frying required in this orange chicken recipe. All you need is a crockpot and a few lazy hours this winter to make this citrusy-flavored meal.
INGREDIENTS
1-½-skinless chicken breasts, cut into 1-inch pieces.
1-cup orange marmalade.
1/3-cup cornstarch.
¼-cup soy sauce.
1-tablespoon rice wine vinegar.
1-teaspoon sesame oil.
½-teaspoon ground ginger.
½-teaspoon garlic powder.
2-tablespoons olive oil – divided.
2-tablespoons toasted sesame seeds.
Orange slices – for garnish.
2-tablespoons chopped green onions – for garnish.
METHOD
Add the coconut oil to a crockpot and let it shimmer under medium-high heat. In a mixing bowl, add the chicken with the cornstarch and season with salt and pepper – toss to combine. Add the chicken to the crockpot and brown for two minutes on each side – remove from the heat.
In a small mixing bowl, add the rice wine vinegar, soy sauce, and orange marmalade – whisk to combine. Add the sesame oil and ginger with the garlic and the remaining oil, toss to combine. Pour the mixture over the chicken and make sure it coats everything evenly.
Seal the pot and cook on high for around 2-hours. Plate the chicken and season with salt and pepper. Scoop the remaining sauce from the crockpot over the chicken and garnish with green onion and sesame seeds.
