2. Zucchini Chips
For a tasty and nutritious side dish for your dinner, try these zucchini chips.
What you need:
A large zucchini
Olive oil
salt
To make:
Cut the zucchini into thin slices. Each slice should be about ¼ inch thick. Using a mandolin to slice the zucchini will ensure that the slices are an even width. To cook the chips in the microwave you will want to cover a microwave-safe plate with some cooking spray. Place the zucchini in a single layer on the plate. Coat the top of the zucchini with some olive oil. Season the pieces with some salt.
Microwave the chips on high for about four to five minutes or until they become slightly browned. Watch the chips closely to determine the proper cooking time. The cooking time will vary based on how thin the slices are as well as the amount of oil that is used. To bake the chips simply preheat the oven to 225 degrees and place the chips on a baking sheet. Bake for 40 minutes, flipping halfway through.
