3. Baked Zucchini Fries
Another great side dish for an evening meal is these yummy and healthy zucchini fries.
What you need:
½ cup breadcrumbs
½ cup parmesan
Tsp garlic powder
Tsp Italian seasoning
Salt
Pepper
2 tsp flour
¼ cup milk
4 medium-sized zucchini
¼ cup Greek yogurt
1 ½ tsp ranch dressing mix
Tsp milk
To make:
Preheat the oven to 425 degrees F. Spray a baking sheet with some cooking spray. IN a bowl add the breadcrumbs, garlic powder, parmesan, salt, pepper, flour, and Italian seasoning. Mix until combined. Cut the ends off the zucchini and then slice in half lengthwise. Cut each of the halves into fourths. Cut each of these pieces in half again to create matchstick type fries.
Pour milk into a bowl. Dunk the zucchini sticks in the milk and then dredge through the breadcrumb mix. Place the fries on a baking sheet in a single layer. Bake for fifteen to twenty minutes or until browned and crispy. In a bowl, combine the yogurt, milk, and dressing mix. Serve the zucchini fries with the dipping sauce.
