The pot
roast is in many ways a perfect meal. This is a recipe that is incredibly quick
and easy to make, that requires very little in the way of crockery and washing
up (just one pot… fancy that!) and that is packed with healthy ingredients.
It’s also very tasty when done right, though it is fiendishly easy to get
wrong.

In the best-case scenario, a pot roast will turn out to be a creamy, meaty type stew with delicious vegetable pieces and potato. It will be filling, satisfying, and tasty. In the worst-case scenario though, it can taste watery with large bits of stringy meat floating in it. This latter result is pretty much what we’re trying to avoid. So how do you make the ultimate classic pot roast? In this post, you’re going to find 14 different recipes, each of which will result in a delicious and satisfying meal that is healthy and easy to make!

1. Chicken Hot Pot

The first and simplest hot pot we’re going to look at making is a simple chicken stew with veg. To make this, you’re going to fill a large with boiling water about halfway. Now add in your chicken – a few breasts or thighs diced and deboned depending on how many people you will be feeding. Leave this to boil.

Meanwhile,
chop the veg. You’re going to be chopping potatoes (skinned and quartered),
carrots (skinned and sliced), onions (into slices), garlic (chopped), and a few
spring onions (sliced). Add all of this into the pot and allow to simmer for a
while.

Next, add some chicken stock, some Bisto gravy granules (chicken), some Maggi (a type of beef stock), and some thickening granules until it is the right consistency.

This is a relatively plain pot roast, but it is a classic, and extremely simple to make.

2. Beef Hot Pot

Next up is
the beef hot pot. For this one, you’re going take the same basic principle:
throwing everything into one pot. This time though, you’re going to use beef as
the primary ingredient – take a few pieces of beef chopped up small, and in
with that you will throw some onion, some peeled potatoes, some shallots, some
garlic, some parsnip, and a fair bit more beef stock and gravy this time
around.

You’re also going to stir in a good amount of red wine, which will help to provide a tangier and richer flavor. Finally, thicken with gravy granules and season with a little bit of rosemary and thyme.

Cooking a beef hot pot like this is an excellent way to create something that is warming, comforting, and filling – and that will help to warm your stomach on a cold winter’s evening.

3. Tomato Chorizo Hot Pot

The last
two examples on this list are your classic warming, wintery meals that have a
very British/Eastern European appeal. How about we try something different and
go for something that is a little sunnier?

For this
one, we’re going to make tomato chicken hot pot. What’s even better about this
recipe, is that you can put it in a slow cooker and that will provide the
perfect way to make a delicious meal that will be ready for you when you get
home from work. The great thing about a slow cooker is that it doesn’t get hot
enough to be dangerous, and it can be set to a timer so that it will be
finished just when you need it.

The recipe,
however you make it, involves taking sliced chorizo, and some diced chicken.
Now place those both into a pot with some potato sliced into chips. From here,
you’re then going to add some oil and start cooking.

While that
goes, add some sliced pieces of garlic and some onion. From here, you’re then
going to pour on a can of chopped tomatoes, a large amount of tomato puree, and
then just a little water. You can now place the lid on if it is in a slow
cooker and leave it to stew.

The idea behind this, is that you’re going to be cooking the chicken, the chorizo and the tomatoes in the tomato. This will then infuse the flavor and the result is something really delicious. Add your own choice of seasoning.

4. Noodly Chicken Hot Pot

One unfortunate aspect of hot pot is that it tends to involve a lot of potatoes, which not everyone finds to be particularly exciting. If you count yourself among those underwhelmed by boiled potatoes, then instead try making some chicken with pasta.

For this
one, you’re going to take some shredded chicken along with sliced onions and
diced garlic. Throw this into a pot together with some peeled and sliced
carrots and some pieces of spaghetti. A top tip is to break the spaghetti in
half first – it makes it easier to fit into the pot and easier to eat once it
is ready.

From here,
you’re then going to pour over some water, with some chicken gravy granules and
some stock. Add in some white wine to taste, and then once again allow the
mixture to cook the noodles for you. Season to taste and consider adding some
thyme and parsley.

When you serve, place in a bowl and crack an egg over each portion.

5. Pork Pot Roast

Pulled pork
is one of the best roasts in general and can be fantastic in a burger or a bun.
But why not make it in a pot or slow cooker and make life easier for yourself?
You can then either eat it with a side of vegetables, or you can place it in a
bun in order to make some delicious pulled pork baps.

For this one, you are going to take some pork shoulder and then fry it with some teaspoon and vegetable oil, along with a chopped large onion, some garlic, and some dried thyme. Once that is a little browned, add into the pot a little water, a larger amount of barbeque sauce, and some apple cider vinegar. Add your stock, a pinch of chili powder, and some Worcestershire sauce. Finally, add in some sugar.

The result will be sweet, sticky pork, which will be perfect for eating in a wide variety of ways. Of course, if you want to turn this into an all-in-one meal, then you can simply add in some potatoes or similar and have the sauce cook them.

6. Slow-Cooked Lamb

While the
pot roasts we’ve looked at so far have predominantly involved adding small
amounts of diced, pulled, or sliced meat; in this recipe we’re going to look at
using one single piece of lamb – specifically half a leg. You can then slice
off of this as you wish.

Place the lamb into your pot and then cook in the oven along with 3 tablespoons of olive oil, a handful of thyme sprigs, a good amount of red wine, a large handful of parsley, and some onion. The result will be a delicious lamb along with a rich red wine and lamb sauce that you can pour over your veg. You can put whatever another veg you want into the pot as well, in order to make something really tasty.

7. Vegetarian Hot Pot

For our vegetarian hot pot, we are going to be making a delicious meal that is full of healthy herbs and vegetables and fuelled by delicious red wine.

To make it,
you’ll be basing your hot pot around carrots, waxy potatoes, sprouts, garlic,
and vegetarian broth, large mushrooms, and eggplant slices. From there, you’ll
then add in some canola oil, some water, some thyme, black pepper, and some
diced tomatoes. You’ll pour over a fair helping of red wine to flavor, and the
result will be hearty, tangy, and satisfying.

There are many different versions of this hot pot you can make, and to be honest, the only real rule, is that you need to use large ingredients that will provide a more savory flavor to replace the meat. Eggplant, parsnips, courgette, mushrooms, and the like will all serve this job well. Then add in the alcohol of course!

8. Tomato Chicken Hot Pot

For this recipe, you are going to take some diced chicken yet again and add to your pot. In here, you are going to pour on your chopped tomatoes and a little bit of puree again, with the objective being to cook the chicken in that tomato, thereby infusing the flavor and making the meal more quickly.

You will then season with salt, pepper, vegetable stock, and

9. Super Quick, Super Easy Hot Pot

Want the
easiest and quickest one-pot meal that you can make?

In that case, take meat of your choice that has been diced. This can be anything from chicken pieces to pork, to lamb. From there, add to the oven in a little water, with some diced onion, and some sliced carrot. Add the relevant type of stock, some peeled potatoes, and a little bit of oil.

If you let
all this simmer in a pot, then you’ll end up with something tasty and basic.
This isn’t the most exciting meal for sure, but it is really quick and easy
when you just don’t have time for a long cook – and it works perfectly well in
a slow cooker too, so you can have it waiting for you.

This basic recipe also serves as the basis for any other more interesting version you want to make by adding in other extras.

""

10. Ratatouille Hot Pot

Sure, you
would normally make this one on a tray, but you can place it in a pot and make
just the same thing and it will be every bit as tasty.

So here,
you are going to chop one red pepper and one yellow pepper. Then place both of
these into a pot along with some onion (one red onion), two chopped courgettes,
and one chopped eggplant. Apply some oil liberally and salt, and then allow it
all to cook in the oven on 180C for about 20 minutes.

At this point, you are going to get the pot out, stir it around, and then add some chopped tomatoes in sauce, along with some goat’s cheese, and some pieces of basil. Place back in the oven for an additional 10 minutes, and then serve with crusty bread for dipping. The result is rich, sweet, tangy, and covered in delicious melted cheese.

11. Half Chicken and Herb

Take half a
chicken and place it in a single pot. Around the edges place some chopped
onion, chopped garlic, and sprigs of rosemary and thyme. On top of the chicken,
pour just a little bit of red wine, along with some oil, and a little bit of
chicken gravy (mix some granules).

Take that and place it in the oven on high heat. Most of the chicken should be outside of the sauce, but the top should be covered in the thin layer of oil and granules. Put the lid on so that it will cook in with all of its own juices and flavorings, and then take the lid off right at the end and place it on a higher heat in order to crisp it up. This is a delicious combination that is less like a stew and more like a traditional roast. Serve with a side of vegetables and preferably some nice big chunky chips (and a dollop of mayo for good measure).

12. Creamy Chicken and Bacon

We’re back
to using pieces of chicken, and for this one, you’re going to take your diced
chicken and place it in a pot with some oil, some onion, and some bacon
lardons. You’re then going to pour over the top a large amount of white wine,
and you’re going to mix that with some cream, and just a little bit of
parmesan. You’ll then chop in some more vegetables – heads of purple sprouting
broccoli, a little bit of eggplant, some courgettes, and maybe a little bit of
cauliflower.

Season with plenty of salt, a little bit of chicken stock, and lots of pepper. You should really taste the wine coming through on this one.

13. Mince Meal

Did you
know you can make a mince pot roast? And in fact, it’s very delicious –
essentially giving you a kind of lasagne without the need for the pasta.

To make this one, you’re going to empty one mincemeat packet into a pot for the oven, and then cover it in chopped onion, chopped tomatoes from a pan, lots of tomato puree, red wine, crushed garlic, and some bacon lardons.

Add in some sliced potatoes along the top, and top off with cheese. The result is a cheesy, hearty, and delicious meal that is very quick and easy to make and absolutely packed with antioxidants.

14. Hot Pot Medley

Finally,
for this last one, we’re going to try a recipe that involves placing a lot of
different ingredients from these previous recipes into a single hot pot. This
hot pot medley will combine different meats in a single pot in order to make
something rich, varied, and flavorsome.

To make the hot pot medley, take some chicken, some pork, and some chorizo and bacon. Let it all boil inside a sauce made from water, chopped tomatoes, oil, and puree. Add in some garlic, some chopped onions, some sliced carrots, and some potato chips. This is protein-packed and a fantastic filling meal to end the week!
