2. Fancier Cheeses
The most traditional form of Mac and Cheese is usually made with the simplest and most common forms of yellow cheese – in the US, this turns out to be cheddar most of the time just because it’s available almost everywhere. The simplicity of the dish is what gives it most of its power when it comes to what you can do with it – and mac and cheese can be changed into what feels like an entirely different dish just by changing the cheese.
If you want to make the dish feel like a million-dollar dish instead, use a fancier cheese than you normally would for your base: Blue cheese is excellent, but might be too overpowering for some; in this case, just use a milder cheese such as brie instead to achieve the same effect.
It’s still the same mac and cheese dish, it just has a much fancier spin.
