The other great thing about quinoa is that you can simply use it to replace rice in a number of dishes – thereby making some of your very favorites that much healthier instantly!
To make chili concane, you are going to start off by frying up some onion, bacon lardons, and mince. When all this is done (use some oil too!), you can add in a can of kidney beans in chili sauce, some sweetcorn, and of course a liberal dose of chili powder to taste. Keep cooking for a while and season with beef stock, salt, pepper, and other spices if you wish (throw in some chillis if you’re brave).
Now you’re going to cook up the quinoa. Throw the chili into the dish, mix up with the quinoa, and then grate cheese on top. You can use Quorn mince if you want to make a vegetarian option, and you can serve this with some nachos and guacamole.
