5. Madeira Sauce
What you need:
- 2 10.5 ounce cans of undiluted condensed beef consomme
- 2 tbsp of tomato paste
- ½ tsp of beef bouillon granules
- 2 tbsp of softened butter
- 2 tbsp of flour
- ½ cup of Madeira wine
To make:
Prepare the beef wellingtons with your favorite stuffing and ingredients. While the beef wellingtons are cooking prepare the madeira sauce to serve with the beef. To make the sauce you will combine the consomme, bouillon granules, and tomato paste in a large saucepan. Bring the mixture to a boil. Reduce the heat and simmer for 20 minutes or until there is only about 2 cups left. Mix the butter and flour together until they are smooth. Add into the sauce a dollop at a time. Bring the mix to a boil and cook until thickened, about 2 minutes. Remove from the heat and add in the wine. Set aside and serve with the cooked beef wellingtons.
