4. Butternut Squash and Sausage Frittata
What you need:
- Tbsp of bacon fat
- 3 oz cooked sausage, crumbled
- ¼ cup diced onion
- ¼ cup diced red pepper
- ½ cup diced butternut squash
- 3 eggs
- 2 tsps fresh herbs
- Salt and pepper to taste
To make:
Preheat the boiler. Beat the eggs with the salt, pepper, and the fresh herbs until all of the ingredients are well combined. Add the fat to a ten inch skillet that is oven proof. Saute the onions and the peppers until they are soft. Add in the squash and the sausage. Cook until everything is heated through. Pour the eggs over the top of the filling and cook until the edges of the eggs begin to set. Put the pan in the preheated oven and broil until the frittata becomes puffy and is brown over the top. This takes about three to five minutes. Remove from oven, let cool for a few minutes, cut into pieces and serve.
