There’s a science and an art to knowing how long to bake a sweet potato pie. The recipe will tell you how long to leave it in the oven, but many bakers find that it’s more of a guideline than a rule set in stone. You need to be prepared to use your own judgment based on how done you like your pie. Overbaked pie is, well, kind of a disaster. It neither looks nor tastes right, and people will turn their noses up at a pie that looks burnt.
You shouldn’t have to slather on extra marshmallow or whipped cream to disguise your mistake! Under-baked pie is an embarrassment. Have you ever had to take pie away and attempt to put it back in the oven? If you have, then you know it rarely comes out again as desired. You can get the temperature right but still, have a failed pie for baking too long or not enough time.
