5. Apricot and Walnut Stuffing
What’s a Christmas dinner without stuffing? Stuffing is an essential part of adding flavor to the turkey – it’s as critical as gravy. This recipe provides a nutty aroma and sweet taste to the stuffing that works perfectly with roasted turkey or duck.
INGREDIENTS
7-oz. Grass-fed butter.
3-onions, sliced.
2-tablespoons tarragon, chopped.
4-tablespoons chopped parsley.
1.5-lbs sausage meat.
5-oz. Toasted walnuts.
5-oz. Fresh breadcrumbs.
2-teaspoons crushed Himalayan pink salt.
3-teaspoons cracked black pepper.
4-oz. Dried apricots, chopped.
1-tablespoon chopped juniper berries.
1-teaspoon mace.
Zest of 1-orange.
METHOD
Melt the butter in a skillet over medium heat. Add the onions and cook until translucent. Stir in the herbs, remove the skillet from the stove and empty the contents into a large mixing bowl. After cooling, add the rest of the stuffing mix and stir until combined.
Preheat oven to 350F and line a loaf tin with wax paper. Fill the tin with a stuffing mix and cover the top with foil. Bake for 45-minutes. Remove from the oven and let cool.
