4. Always Use a Binder
One of the defining characteristics of a great corn casserole is the combination of ingredients and how the flavors and textures mingle together. The reason why this is possible is the addition of a binder to the recipe. Don’t think that you can skip the binder ingredients and end up with a fantastic casserole. You’re more likely to get a sloppy meal with a clash of flavors instead.
Typical binders include beaten eggs or sauces like curry, and béchamel, along with various pasta sauces and vegetable soups. Make sure you add it in the casserole if the recipe calls for a binder. Our favorite binding for a great corn casserole is creamed corn kernels. The creamy constituency of the corn brings all of the flavors together and provides the dish with a creamy texture.
If you don’t have access to creamed corn, consider mixing some whole raw milk with a few tablespoons of cornstarch in a food processor.
