10. Smashed Crispy Potatoes
What you need:
One and a half pounds of small potatoes
3 tablespoons of melted butter
A tablespoon of olive oil
Salt and pepper
Optional garnish: chopped parsley
What to do:
Fill a pot with water and bring to a boil. Add in the potatoes and cook for about 20 to 25 minutes or until they are softened. If the skin splits it is okay. Another option is to microwave or to steam the potatoes. Preheat the oven to 350 degrees F. Once the potatoes are soft, drain them and let dry in a colander. Place the potatoes on a baking tray when they are dry and then use a potato masher or a fork to smash them.
Leave them on the tray to dry further. Drizzle with the melted butter and a bit of olive oil. Sprinkle with salt and pepper to taste. Bake for about 40 minutes or until crispy and golden in color. Do not flip during cooking time. Sprinkle with parsley if desired.
