5. Sausage Tortellini Soup
The combination of sweet Italian sausage, vegetables and seasonings makes this full-bodied soup hearty enough for a full meal. The base of this soup is chicken broth, but for a stronger meat flavor, you can also use a beef broth base.
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 celery stalks, sliced
- 2 carrots, sliced
- 20-ounce sweet Italian sausage with casings taken off
- 5 cups chicken broth
- 28 ounce of crushed tomatoes
- 1 can of white beans
- 10-ounce package of cheese tortellini
- 4 cups spinach leaves
- 2 tablespoons fresh parsley
- Salt and pepper
In a large pot, heat up oil and saute celery, carrots, onion until soft for about five minutes. Add salt and pepper. Cut up sausage and add to the pot. Brown thoroughly. Add chicken broth and tomatoes and simmer. Also add beans, spinach, and tortellini and cook for five minutes. Stir in parsley.
