4. Chicken vegetable Tortellini Soup
This hearty soup is filled with vegetables and has a chicken base. It is nutritious as well as delicious and is a cold-weather favorite.
1 ½ cup of sliced carrots
1 large onion, chopped
2 cloves of garlic, minced
1 teaspoon of dried thyme
5 cups of chicken broth
1 ½ cups of sliced zucchini
½ cup of chopped celery
1 ½ cup cut plum tomatoes
1 can kidney beans, drained
1 10 ounce package cheese tortellini
2 tablespoons grated parmesan cheese
Combine carrots, garlic, celery onion and thyme with half of the broth in a large pot. Boil, reduce the heat and cook for 8 minutes or until the vegetables are softer. Add the rest of the broth, zucchini, beans, tomatoes, and tortellini. Boil and then reduce to low heat. Cook for 10 or 15 minutes until the tortellini is to the desired texture. Serve with sprinkles of parmesan cheese on top.
