4. Chocolate Pumpkin Pie
The only dessert better than pumpkin pie – is chocolate pumpkin pie. This decadent dessert is delicious for after Christmas dinner.
INGREDIENTS – Chocolate Crust
9-oz. Chocolate wafers.
¼-cup confectioners’ sugar.
1-teaspoon Himalayan pink salt.
½-cup melted grass-fed butter.
INGREDIENTS – Pumpkin Pie Filling
1-can pumpkin puree.
1-cup granulated sugar.
1-teaspoon ground cinnamon.
½-teaspoon grated ginger.
½-teaspoon Himalayan pink salt.
2-large free-range eggs.
1-cup heavy cream and 2-tablespoons extra.
2-tablespoons dark cocoa powder.
METHOD
Preheat the oven to 375F. Grease a 9-inch pie dish and set aside. Add the cookies, salt, and sugar to a food processor and pulse till blended. Add the melted butter and pulse. Add the butter to the pie dish and pack it down.
Place the ingredients for the filling into the food processor and pulse to combine. Reserve a cup of the mixture in a small bowl and set aside. Pour the rest of the mixture into the pie dish on top of the crust.
Add the cocoa powder to the top of the filling and drop the reserved mixture on top of the pie in blobs. Swirl the batter into the cocoa powder. Bake in the oven for 50-minutes until the filling sets up. Serve with fresh whipped cream.
