5. Mashed Sweet Potatoes
What you need:
2 sweet potatoes, with the skin on, diced into pieces about 2 inches in size
2 tbsp of pure maple syrup
¼ tsp of ground cinnamon
Crushed pecans
To make:
Steam the sweet potatoes until they are very tender. This will take about fifteen to twenty minutes. There is no need to remove the skin. Once the potatoes are steamed and quite tender, remove and transfer them to a food processor. Puree the potatoes until smooth. You can also mash them by hand using a potato masher. Once the potatoes have been pureed, add in the cinnamon and the maple syrup. You can use honey instead of maple syrup if desired. Agave nectar is another alternative sweetener that can be used. Mix the potatoes well. You can add more or less syrup to taste. Top with the crushed pecans and serve hot.
