2. Flour-free Carrot Cake Oat Bake
The wonderful thing about carrot cake is how it makes you at least think of being healthy. With this bake, you’ll get all the flavor, minus the fuss – or flour! Use this as a power-packed breakfast if you like – it contains oats, carrots, almonds, chia seeds, and pecans.
Ingredients: 1/2 cup oats, 1 carrot (grated), 1 teaspoon vanilla extract, 1 handful almonds (chopped), 1/4-1/3 teaspoon baking soda, 1 tablespoon chia seeds, cinnamon, ginger, 1 teaspoon maple syrup (optional), light coconut milk, 1 handful pecans, and 1 tablespoon coconut oil.
Add the oats, chia seeds, almonds, spices, baking soda and grated carrot to a baking tray greased with coconut oil. The spices are vanilla extract and ginger. Now add coconut milk and vanilla extract if you’d like it sweeter. The oats will soak up the milk as your pour it in so do this slowly and expect that you’ll get a stew- or soup-like consistency. Add some more pecans plus grated carrots at the top. Now bake at 400F for 15 or 20 minutes. Enjoy a guilt and refined-sugar-free treat!
