Secret #4 – Under-fill Never Overfill
As we’ve already mentioned – a good quality machine is one of the best-kept secrets to making the perfect batch of ice cream. However, no matter how good your device is, it can’t make up for a poor method. If you don’t learn how to use the equipment, you can expect consistently poor results.
Don’t overfill the ice cream maker.
That’s our biggest tip for using the ice cream machine. Filling the bowl too far leaves no room for the air to work its way into the batter and you’ll find that your mixture doesn’t aerate properly. This mistake results in an ice cream that’s chewy and has flavor pockets in the final product.
Fill your bowl about two-thirds of the way and if you have extra batter, make a second batch or leave it in the fridge for a few days until you’re ready to make a second batch of homemade ice cream.
