Secret #5 – Add the Extras at the End
Hands up if you’re a fan of chocolate chip ice cream. We love our additional extras in our recipes as well. There’s something about caramel chunks and pieces of cookie that drive our taste buds wild with excitement. You may find it hard to believe, but making a batch of ice cream with additional extras is relatively challenging.
However, when you’re mixing up a batch of batter, leave the extra goodies until the very final stage of mixing, and then add them to your mixture.
If you add the extras too early, they’ll sink to the bottom of the batter, and you’ll have an uneven distribution throughout the ice cream after it’s done freezing.
Wait until the very last minute of churning the batter before you add the chocolate chips, nuts or candy pieces, and you’ll get a nice even spread of the extras throughout the batter. It’s critical that your mixture isn’t too thin when you add the chips, or they’ll sink to the bottom as well.
