8. Sausage-Egg Burritos
Get a nutritious start to the day with this breakfast burrito recipe, stacked with protein and healthy carbs.
INGREDIENTS
½-lb. Lean turkey sausage.
6-whole wheat tortillas – warmed
4-large free-range egg whites.
3-large free-range eggs.
2-cups chopped spinach.
2-plum tomatoes – chopped.
1-clove minced garlic.
1-tablespoon extra-virgin olive oil.
¼-teaspoon cracked black pepper.
1-cup salsa.
METHOD
Place a skillet over medium-high heat and add some oil. When the skillets hot, add the sausage and cook for 5 to 6-minutes until no longer pink. Crumble the sausage while you cook and then remove from the pan and set aside.
In a separate mixing bowl, add the eggs and egg whites – whisk until light and fluffy. Add the eggs to the skillet and stir to cook evenly. Remove from the skillet and set aside.
Add spinach, tomatoes, and garlic to the skillet, (you may have to add some extra oil at this point.) Cook for 3-minutes until the spinach wilts. Add the sausage and the eggs back to the skillet and stir to combine. Season with salt and pepper and then transfer to the tortillas. Wrap up the tortillas into burritos and se3rve with salsa.
