5. Seared Ribeye with Blue Cheese Butter
The ribeye – a legendary cut of beef that’s famous the world over for its flavor and tenderness. Known as the “cowboy steak,” the ribeye is best served on the bone, where it draws its spectacular flavor. The ribeye is a fatty cut with marbling throughout the meat. This fat gives the steak a richer taste and loads of juice. The blue cheese butter with this recipe is a real win, try it for yourself.
INGREDIENTS
20-ounce, grass-fed ribeye steak, with the bone.
2-tablespoons coconut oil.
2-tablespoons grass-fed butter.
1-tablespoon fresh rosemary.
Crushed Himalayan pink salt and cracked black pepper to taste.

2-tablespoons crumbled blue cheese
½-stick grass-fed butter.
1-clove minced garlic.
METHOD
Preheat the oven to 450F. Season the steak with salt. Add the oil and butter to an ovenproof skillet and place on the stove over high heat. Place the steak on the skillet with the rosemary and leave it there for 30-seconds to sear, repeat for the other side. Transfer the skillet to the oven and let it bake for 5-minutes if you enjoy a medium-rare steak.
Remove from the oven and transfer to a cutting board to rest for 15-minutes.
Place the butter in a microwavable bowl and melt while the steak rests. Add in the blue cheese with the garlic and mash with a fork until combined.
Pour the butter over the steak and serve.
