2. Traditional Macaroni Salad
What you need:
8 ounces dry macaroni noodles
½ cup mayo
½ cup plain Greek yogurt
1 and a half tbsp white wine vinegar
2 tsp of dijon mustard
2 tsp of honey
Salt and pepper to taste
2 hard-boiled eggs, chopped
A cup of red bell peppers, diced
A cup of celery, diced
½ of a cup of red onion, diced
A tbsp fresh parsley, minced
To make:
Cook the macaroni according to the direction located on the package. Once it is cooked, drain the noodles and rinse with cold water. Let drain well and make sure that the noodles are completely cooled. In a mixing bowl, mix together the yogurt, mayo, vinegar, honey, and mustard.
Season with salt and pepper. Add the drained macaroni to the mixing bowl. Mix well. Add in the eggs, peppers, onion, and celery. Stir until combined. Add in the parsley. Serve or store in the refrigerator overnight.
