4. Avocado and sun-dried tomato toast
This is more like a summer thing than a winter thing. It is easy and quick to cook, and in just a few minutes you will have ready to serve and enjoy some delicious veggie toast that all your family can enjoy. All you have to do is take some sliced bread and toast it. You can use a toaster or pre-heat the oven and then put the slices of toast on a baking dish and cook them for a couple minutes.
Try adding your favorite seasoning, we prefer garlic and cilantro but this is all up to you. Meanwhile, smash some avocado and add a bit of lemon juice to prevent it from becoming brown. Soak the sun-dried tomato in water with olive oil. When the bread is ready, spread the avocado on it and then add the sun-dried tomato on top. Done!
