3. Ground Turkey Enchiladas with Black Beans

INGREDIENTS
1 pound extra lean ground turkey
12-low carb flour tortillas.
1-can black beans, rinsed and drained.
1-½-cups enchilada sauce, divided.
½-cup grated Monterrey Jack cheese.
1/2 cup grated mature, cheddar cheese.
2-teaspoons coconut oil.
1-onion, diced.
3-cloves minced garlic.
½-teaspoon chili powder.
½-teaspoon ground cumin.
1-teaspoon dried oregano.
2-tablespoons tomato puree.
½-cup chicken broth.
1-whole lime, juiced
Crushed Himalayan pink salt and cracked black pepper.
Thinly sliced scallions, for garnish.
Lime wedges, for serving.
Sour cream, for serving.
METHOD
Preheat the oven to 400F. Grease a 13×9-inch baking dish with grass-fed butter and set aside. Add the coconut oil to a skillet and place over medium heat. Add the onions and cook till translucent. Stir in the garlic and cook until fragrant.
Season the turkey with cumin and add the skillet. Break up the turkey with a wooden spoon and add the oregano, chili powder, salt, and pepper. Cook for 5-minutes until the turkey begins to brown.
Stir in the tomato paste and add the chicken broth along with the beans and lime juice. Bring the mixture to a boil, stir for 1-minute and then remove from the heat.
Flour a working surface and place a tortilla on top of the flour. Ladle one spoon of the mixture onto the center of the tortilla, fold the edge over and roll tightly. Repeat for the rest of the tortillas.
Spread half a cup of the sauce on the prepped baking tray and add the rest of the tortillas. Place the enchiladas seam-down and cover with the cheese. Bake for 20-minutes until the cheese bubbles, and the tortillas turn golden brown. Garnish with scallions and sour cream, serve with lime wedges.
